SBU Eats Proudly Serves Over 10 Million Meals Annually
Serving more than 7,000 guests daily across two dine-in locations, and welcoming 27,000 guests each day at 34 retail concepts across campus, SBU Eats continues to lead the way in collegiate dining. From micro-farms that bring freshly harvested greens straight to the plate to partnerships that utilize the rich resources of the Long Island region, SBU Eats continues to redefine what campus dining can be. By emphasizing nutritious, locally sourced meals, creative menu options, and programs that engage and inspire the Stony Brook community, SBU Eats delivers a memorable dining experience that’s as fresh and forward-thinking as it is flavorful.
Wellness and Nutrition That Supports Every Lifestyle
The SBU Eats Nutrition and Wellness team supports the well-being of the SBU community through nutritious dining, hands-on learning and personalized guidance. Through individualized nutrition counseling services, students can meet one-on-one with the campus registered dietitian to explore their personal goals, address dietary challenges, manage food allergies and develop sustainable eating habits that align with their lifestyles and cultural preferences.
Students have access to wellness sessions that address digestive health; food sensitivities; chronic condition management such as diabetes, performance and strength nutrition for student-athletes; and weight management. The program fosters an environment of trust, inclusivity and education, ensuring every student receives the guidance, resources and support needed to achieve their nutritional and wellness goals.
Through the Nutrislice app, guests can easily browse daily menus, filter by dietary preferences or allergens, and access detailed nutrition information to make informed dining choices. With more than 1,200 recipes available on the platform, the SBU community enjoys a dynamic dining experience that encourages exploration and balanced eating. Menus are crafted around seasonal availability, highlighting the freshest local ingredients. Over a three-week rotation, dining locations feature more than 88 fresh vegetables, 30 fruits and 20 plant-based proteins, including dedicated vegan stations at dine-in venues.
Bringing the Best Brands and Flavors to SBU
The Seawolves community has access to the brands they love, including popular favorites such as Starbucks, Dunkin’, Subway, Popeyes, Nathan’s Famous, Carvel and David’s Cookies. Guided by national trends and direct student feedback, these franchises are thoughtfully selected to complement the other retail dining options. The dining team also manages a fleet of local food trucks, partnering with small businesses from across Long Island to bring fresh, diverse and culturally inspired flavors to campus. This initiative not only supports local entrepreneurs but also enhances the variety and vibrancy of dining at Stony Brook University.
Commitment to a Greener Campus
Making environmentally conscious choices is easy when you dine on campus, thanks to sustainability initiatives developed by SBU Eats. Every student on a meal plan receives a complimentary reusable container to use at East Side and West Side Dine-in. Since its inception, 219,000 containers have been diverted from the landfill, cutting fossil fuel use, reducing waste and shrinking the campus’s carbon footprint.
Dining sustainability initiatives actively address campus food waste through comprehensive composting and waste diversion efforts. The student-led Weigh the Waste initiative educates students and staff about post-consumer waste, identifies opportunities for reduction and raises awareness of sustainable practices. Each dining unit conducts regular waste audits, tracking pre- and post-consumer waste through the Waste Not 2.0 platform to guide menu planning, portioning and educational programs. Collected compostable materials are processed in micro-composter bins and then used to support campus landscaping, the Cultivated Cabinet micro-farms, and community garden projects, reinforcing a truly closed-loop food system.
Aligned with SBU Eats’ commitment to sustainability and wellness, the Cultivated Cabinet micro-farms bring farm-to-table meals directly to dining venues. These hydroponic systems grow fresh greens, herbs and micro-vegetables inside dine-in locations, providing nutrient-rich ingredients just steps from each guest’s plate. The produce enhances meals with peak freshness, flavor and a wide range of vitamins, minerals and antioxidants. For example, basil harvested from the micro-farm is made into pesto with parmesan cheese, olive oil and garlic, serving as a versatile ingredient, garnish, salad dressing or grill drizzle. Beyond nutrition, these cabinets act as a living sustainability lab, engaging the SBU community in hands-on learning regarding agriculture, food systems and environmental responsibility. By cultivating food on-site, the initiative reduces transportation emissions and packaging waste, supports New York’s local agriculture and advances the university’s carbon-neutrality goals with every harvest.
Connecting with Students
The SBU Eats team values its connection to the Stony Brook community, transforming dining into a collaborative and enriching experience. Students partner with chefs to create student-inspired recipes for the menus, bringing personal creativity and family traditions into the kitchens. These collaborations invite students to share ideas, contribute to green initiatives and gain hands-on experience, making dining a shared effort that reflects the heart of the SBU community.
Each semester, the Cooking from Home program showcases student recipes and celebrates diverse cultural backgrounds by turning homestyle dishes into meals served across campus. Students work closely with SBU Eats chefs to refine and scale their recipes, translating family traditions, regional flavors and cultural stories into dishes for the community to enjoy. This program offers the community a unique opportunity to taste, learn and connect with the students behind each creation.
Beyond culinary engagement, SBU Eats provides meaningful employment for more than 130 students each semester. These on-campus positions support students’ educational and personal expenses while equipping them with transferable skills and real-world experience for future careers. Student employees gain hands-on expertise in hospitality, food preparation, teamwork and time management, skills that benefit them in any professional path.
SBU Eats Cares
In partnership with the SBU Student Support Team, the SBU Food Pantry and other campus partners, the SBU Eats Scholarship Program was created to support students facing food insecurity and help ensure that no student goes hungry. Beyond the university, SBU Eats extends its impact to the local community through the CareIt program, an online marketplace that connects surplus food with local agencies in need. This initiative helps prevent food waste by allowing organizations to “rescue” leftover food before it reaches the landfill. Through CareIt, SBU Eats has donated over 5,000 pounds of food to the SBU food pantry and local agencies.
